Craving Thai food without having to fly to Thailand? From now until 8 November 2026, Carousel at Royal Plaza on Scotts is bringing the vibrant flavours of a Thai night market to Orchard Road with AROI MAK!

This limited-time dinner buffet is a special collaboration between Celebrity Chef Melvyn Lee and Carousel’s Chef Darren Ong, featuring signature dishes from Chef Melvyn’s Thailand-based restaurant.

Expect a spread of Thai favourites packed with bold, aromatic flavours, alongside street food-inspired dishes that bring the lively spirit of Thailand’s night markets to Singapore.

Here’s a look at what’s available at the AROI MAK! Thai Night Market Dinner Buffet at Carousel. 

There was also an array of Thai salads to enjoy, offering a refreshing contrast to the richer and spicier dishes at the buffet. The salads were fresh, vibrant and packed with flavour, with a nice balance of sweet, tangy and spicy notes. They were surprisingly refreshing and made for a great start to the meal.

You can also enjoy the Heck Hoi Signature Fresh Rolls, another signature dish from Chef Melvyn’s Thailand-based restaurant. These fresh rolls are light and refreshing, filled with crisp lettuce and herbs, with a generous topping that adds plenty of flavour. Served with a dipping sauce on the side, they make for a refreshing bite between the richer dishes at the buffet.

The Giant Tom Yum Lobster & Seafood Yum Woon Sen was one of the eye-catching dishes on the buffet spread. At first glance, it almost reminded me of a seafood paella, but with a distinctly Thai twist.

Instead of rice, the platter was filled with glass noodles, topped generously with lobster, prawns, mussels and clams, along with fresh herbs and chillies. The noodles were infused with the familiar tangy and spicy flavours of tom yum, making this a hearty and flavourful seafood dish to dig into.

The Tom Yum Chilli Crab is another indulgent seafood highlight, served alongside crispy golden mantou. The crab is coated in a rich, spicy and tangy tom yum chilli sauce, making it perfect for dipping the fluffy mantou into the delicious sauce.

One of the highlights was Chef Melvyn’s Signature, featuring fresh clams and oysters served in a rich, flavourful stock. It comes with “Mee Kao” (bee hoon), which soaks up the delicious broth, along with Chef Melvyn’s family-recipe sambal for an extra kick.

To end the meal on a sweet note, there’s the Thai Milk Tiramisu, a delightful fusion twist on the classic Italian dessert. Creamy, smooth and infused with Thai milk tea flavours, it makes for a lovely dessert after all the savoury dishes.

Topped with fresh strawberries, blueberries and a touch of Thai-inspired garnish, it was simply yummy and a sweet way to end the night.

Back to the evergreen favourites at Carousel, the seafood corner is easily one of the sections that most buffet-goers will make a beeline for. 

There’s an impressive selection of seafood on ice, including lobsters, oysters and more, making it a tempting stop for seafood lovers. The beautifully presented spread is perfect for piling your plate high before moving on to the other dishes at the buffet.

And of course, not forgetting the meat section, where you can find hearty selections for meat lovers. The roast beef caught my attention with its beautifully browned and slightly charred exterior, topped with fresh rosemary and pink peppercorns. The thick slices looked tender and juicy, making this a tempting choice to add to your plate.

The herb roasted chicken was another comforting option from the meat selection. Roasted until the skin turned beautifully golden and crisp, the chicken was generously seasoned with herbs and served alongside fragrant herbs. It looked wonderfully succulent and made for a satisfying addition to the buffet spread.
